    PHF (cheescakes) were held at 52-61°F in the retail pie case rather than 41°F or below as required. All were discarded. See item #31.
  • Cooling, Heating, & Holding Capacities (46.611)
    Bakery retail pie cooler is not maintaining PHF at 41*F or less. Do not use this cooler again for any until it can do so.

  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    RTE PHF was held at 125 degrees F rather than 135 degrees F or above as required in the main Deli hot case. chicken 125*F. Unit turned up--chicken last checked at 135*F. Keep this unit up high enough to keep all items at 135*F minimum.
  • Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
    Opened commercially processed ready to eat food (deli meats & cheesed held more than 48 hours) were not marked with the date it was opened. Regulations reviewed--implement immediately.
  • Food Temperature Measuring Devices Provided (46.632)
    Temperature measuring device for ensuring proper temperatures was not available in the main Hot Foods case. Correct by tomorrow.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    Black dust accumulation on walk-in cooler fan screeens (Deli/Dairy). Clean/correct by December 10, 2010.
  • Rinsing Procedures (46.718)
    No rinse basin was set & being used at Bakery 3-bowl sink. Dishes were being washed & then placed in sanitizer water. Use of a distinct, separate water rinse after washing and before sanitizing must be done. Regulations reviewed & basins set up accordingly.
  • Cleanability of Floors, Walls, & Ceilings (46.921)
    Noted white panels behind the Bakery & Produce warewash sinks w/ pitted peeling up surfaces--no longer nonabsorbent, smooth, & cleanable. Correct by January 5, 2011.
  • Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
    Paper towel dispenser not functioning in the Bakery--loose roll present--must be dispensed. Correct by December 10, 2010.
  • Using Dressing Rooms & Lockers (46.981(j))
    Observed employee clothing/personal items in the Deli & Bakery stored on stock shelves--must be in a designated area. An area was established & items relocated.
