Build up of dried food residue on interior top sections of new dishmachine access door (a single 3 sided door). Reviewed need for regular cleaning. Correct immediately.

Dishmachine pre-wash/spray wand sink and disposal not operable (problem with new disposal attaching to exsisting sink basin). In the interm staff must pre-rinse using the plastic basin provided. Reviewed need to keep dishmachines scrap basket clean/emptied.

- Accuracy of Pressure Measuring Devices on Mechanical Warewashing Equipment (46.563)
Pressure gauge on high temp dishmachine reads 28-30 psi during rinse (code requires 15-25 psi). The wash temperature gauge reads 144*f and does not move, so I think the gauge is inaccurate?,( data plate on machine requres wash temperture of 160*F) . final rinse temp gauge OK at 180*f, plate temp at 160*F. PIC related that this unit is scheduled for replacement over the summer break, the gauge issue are a moot point IF this unit is to be replaced.
