Observed one 8 pound case of pasteurized cream butters left out at ambient air temperatures and not held at 33*F to 40*F as is stated on the manufacturer's (Wholesome Farms) master container. The case was discarded.

Potentially hazardous ready-to-eat food prepared in the food facility and held for more than 48 hours located is not being date marked. This was previously discussed & cited--implement immediately.
Ventilation Hood System Drip Prevention (46.581)
Two of the filters in the main cooking line ventialtion hood are missing actual individual baffles which is leaving an open airway for grease to travel through. Replace these two filters.
Cutting Surfaces Maintained (46.672)
Observed deeply scored cutting boards (all 3 prep tables) not resurfaced or discarded as required. Discontinue use until replaced/resurfaced. The owner, Ron White, stated that he will order new ones.

The light bulb in the walk-in cooler is not shielded from breakage--at minimum, replace w/ rubber coated bulb. Repeat violation.
