One section of freezer is not holding product solid to the touch as required. The product in this freezer was moved to another unit.

The condesation associated with the evaporator in the walk in cooler is not conveyed to a drain. The water is designed to flow around fluted channels. Those channels are leaking causing water to drip on the floor when the unit goes through a defrost cycle. (every couple days).

There is some accumulation of frost in the upright meat freezer.
- Availability, Capacity & Pressure of Water (46.805)
There is no hot this place today (save 20 quarts in roaster). The owner said that the repairman is scheduled to replace the hot water tank today.

Facility is generally aged. There are some surfaces which are less than ideal for cleaning. eg. see table top holding slicer.

Fresh oysters are offered for retail sale. The shellstock tags were not maintained for the required 90 days.
- Cooling, Heating, & Holding Capacities (46.611)
The walk in cooler (attached to walk in freezer) is not holding foods below 41 deg. F. There are no potentially hazardous foods in this unit therefore, this is not a violation of maximum cold hold temperatures.

- Food Temperature Measuring Devices Provided (46.632)
Some deli meats stored in a home grade refrigerator. The thermometer in that unit does not neccessarily reflect the internal temperatures of that product. I discussed acceptable monitoring methods with owner to abate this.
- Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
No sign or poster posted at the handwash sink in the food prep area to remind food employees to wash their hands.
