Reheating Food (46.365)
Observed whole roast beef 40*F product center , exterior of roast 85 - 118*F being reheated using a hot holding unit for aprx 60 minutes. Whole roast beef ( USDA muscle intact ) which was cooked rare ( PIC stated 130*F) and cooled, was not reheated to 130 degrees F within two hours, for hot holding. Product reheated to 130*F using the commercial oven and placed into the hot holding unit. Received and reviewed PDA handouts for cooking and reheating times and temperatures. Reviewed preslicing rare roast beef and reheating for immediuate service procedures.
