Milk and cheese were held at 52, 53 and 65 °F, in the walk-in cooler, rather than 41°F or below as required. Other foods in walk-in cooler were at or below 43 degrees F. PIC indicates delivery took place prior to inspection and delivery person propped the walk-in cooler door open, raising the temperatures of the food. This is unacceptable and must not be permitted in the future. The high milk temperatures were attributed to being out during breakfast but had not cooled to proper temperatures. Milk and cheese were disposed of.
