Thermometer in under counter cooler in dessert bar displayed >130*F. Replaced with functional thermometer.
- Maintenance & Operation of Mechanical Warewashing Equipment (46.675(a)-(c))
Stem of wash gauge of dishmachine did not move during operation- it stayed at under 100 °F. Data on machine indicate that stem should be between 140-150*F during operation.Rinse gauge displayed 130*F ,speed was 3.5'/min,and chlorine was 50 ppm, all as required.Appears that gauge is not operating. Candy Hibbs phoned Eco Lab during inspection for correction. Eco Lab personnel should be here today or tomorrow. This same violation was documented on 1/27/11 inspection report and staff report that it was corrected. Please train all dishmachine operators to check that machine is operating correctly(gauges, chlorine)prior to use.And please have correct speed displayed on or near machine.

- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Ambient of under counter cooler under right toaster of cook line=50. Internal of 1 pound of seafood topping(contains shrimp,spinachetc...) in cooler=49°F. Had been in cooler overnight. Discarded (1 lb, $10.00).This cooler will not be used for phf's until it can hold them at 41 or less internally. Refrigeration repairmen was called.

No thermometer seen in under counter cooler across from Vulcan fryers on cook line. Please supply by 2-3-11.
