  • Consumer Self Service Operations, Raw Unpackaged Animal-Derived Foods Prohibited (46.343(a))
    There was a stainless steel hotel pan with packaged ground beef in the pan. It was held in the walk-in cooler, off the main kitchen. It was stored on a shelf above whole vegetables (must be stored below foods which will not be cooked). This was corrected as I moved the product to a lower shelf.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    The exterior of the harvest shield for the ice machine off of the main kitchen, has some mold like matter. This is a non food contact surface
  • Lighting Intensity (46.943)
    The light in the walk in cooler in the main kitchen is inadequate in intensity. That is the bulb does not cast adequate light. Recommend fluorescent bulb replacement as they operate cooler than incandescent (will not melt the plastic shield).

  • Cooling Potentially Hazardous Food (46.384(a)(b))
    Chicken is cooked on a rossitere cooker. It is offered for sale in a hot hold case. It is then placed on foam trays, covered with overwrap, and placed in a retail (open) display cooler. Workers cannot warrant that the product is cooled to below 41 deg. F. within six hours of the hot hold process. Additionally, the cooler is not made to circulate air such as to provide for rapid cooling.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    The deli meat display cooler is holding various cheese and lunch meats at temperatures ranging from 38 deg F. to 47 deg F. The portion of the unit holding cheese, on the bottom, being the coldest and the shelf with cheese being the warmest. PIC said the case is scheduled to be torn down for defrosting this evening. And that process will correct the temperature concerns.
  • 3 C.S, 6501-6510 (FEC)
    The posted certificate for the certified safe food handler is expired. A certified employee must be procured within 90 days.

    As previously noted, Gallons of milk are overstocked in the retail display cooler.
  • Labeling (46.422)
    Store made sandwich spread is a multi-ingredient product. It is prepacked and offered for retail saile. It is not marked with a list of ingredients as required.
  • Cooling, Heating, & Holding Capacities (46.611)
    The open display case holding sauerkraut appears that the circulation system is not functioning as designed. There is a large amount of cold air escaping this unit.
  • Light Bulb Protective Shielding (46.922(a))
    The seal around the walk in freezer door is not tight fitting such that it is allowing air infiltration and frost is developing on some products. The outdoor walk in cooler door is not closed tight. This unit is marginally cold enought and air infiltration may be retarding the cooling potential of the refrigeration system.
