    1 lid missing on outdoor dumpster. Please supply by 1/19/12.

    An open employee's beverage container was observed in a food preparation area. Corrected during the inspection.

    Shell eggs held at 50 °F, in the cook area, rather than 45°F or below as required. Eggs were immediately moved to cooler.

    Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was less than 50 ppm, and not 50-200 ppm as required. All three containers of chemicals were replaced with new containers. Recheck of concentration was 50 ppm. Facility is to re-run all dishware to ensure it is properly sanitized.Failure to monitor chlorine sanitizer concentration daily.

    Observed dirty cardboard on floor or walk in cooler. Observed dust accumulation on ceiling fan and conduit on ceiling of kitchen. Also observed ceiling is peeling in kitchen above cooking and prep areas. Correct asap.

    Observed 3 light bulbs (two in walk in cooler and one outside walk in cooler) are not shielded or shatter proof. Correct asap.
