- Variance Requirement for Specialized Process Methods (46.401)
Facility has started processing and preparing fresh clams, oysters, and mussels as of 5/10/10. A HACCP plan has been reviewed with the owner and initiated for this facility. Owner has kept all seafood tags and is instructed to maintain her tags for a minimum of 90 days. Management has also started a HACCP log book for her fresh seafood and understands that the log book will be maintained and kept up to date at all times.
