Observed line cook crack fresh shelled eggs onto the grill and then wipe hands into a common cloth terry towel hanging from his apron strings. Explained to owner and line cook regulations requiring a hand wash after handling raw animal derived foods. Corrected on the spot.

Observed in-use serving utensils stored in standing water, hanging through deep fat fyer basket handles, and from broiler handles.

Observed par cooked sliced potatoes being stored in a large pan next to the grill at room temperature. Internal product temperature found to be at 60 degrees F. Approximately 4 pounds of par cooked potatoes disposed valued at approximately $5 dollars.
