Noted a couple of broken floor tiles at basement door entrance. Correct so that it is a smooth easily cleanable surface.

- Duty of Food Employees to Wash (46.132)
Employee observed scratching his nose with a gloved hand. Prompting needed to wash hands.
- Time as a Public Health Control for Potentially Hazardous Foods (46.385(c))
Time in lieu of temperature is being used as a control for liquid eggs. Leftover product was returned to refrigeration after being at room temperature for half and hour as dictated by corporate policy. Product had an internal temperature of 46F (two different thermometers used to confirm temperature) after being in refrigeration for a couple of hours according to manager on duty. The container of eggs had not been marked. Spoke with manager regarding issue via telephone who will discard. Product volunarilly thrown away.
