Chlorine sanitizer solution being used in excess of 200 ppm on food contact surfaces in the three bowl sink.

Hot food, which was cooled, was only reheated to 140 degrees F for hot holding and not 165 degrees F for 15 seconds as required. Food was being heated on the hot hold units.

Cooked potatoes were held at 47 degrees F rather than 41 degrees F or below as required. Potatoes were moved to an acceptable location during this inspection.

Slicer has an accumulation of food residue on the food contact surfaces. Slicer was cleaned on site.
