    Several refrigeration units are not supplied with accurate thermometers. Supply all refrigeration units with accurate thermometers. Owner states thermometers were ordered.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    The display cooler in the kitchen has a torn door gasket. Replace the torn gasket. Owner states the gasket was ordered.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    The equipment listed herein requires cleaning to remove food debris and grease: display cooler in kitchen, upright freezer in kitchen, the dough cooler, and the two prep units on the cooking line. Clean all of the equipment and maintain the equipment in a clean and sanitary condition at all times.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    The floor under the can rack, the floor in the walk-in cooler, and the wall behind the dough prep table require cleaning to remove food debris. Clean all surfaces listed and maintain them in a clean condition.

    Shellstock tags are not maintained for 90 days from the date the container is emptied. Save all shellstock tags for ninety days after the bag has been emptied. Store the tags in an orderly fashion and have them ready to present upon request.
  • Preventing Contamination from Food Employees' Hands (46.261)
    Employees were observed handling ready-to-eat food, lettuce for salads and a roll for a sandwich, with their bare hands. Gloves were not available for use in the facility. Purchase food service gloves and instruct your employees to wear them when they handle ready-to-eat food.
  • Food Storage Requirements & Prohibited Areas (46.321)
    Observed bags of rolls stored directly on the floor in walk-in freezer, rather than 6 inches off of the floor as required. Remove the rolls from the floor and store them on the available shelving.
  • Food Temperature Measuring Devices Provided (46.632)
    Several refrigerators in this facility are not supplied with accurate refrigeration thermometers. Supply all refrigerators with thermometers.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    The display cooler in the kitchen has a torn door gasket. Replace the torn door gasket.
  • Cutting Surfaces Maintained (46.672)
    Observed deeply scored cutting boards, on two refrigerated food prep units, not resurfaced or discarded as required. Resurface or discard the cutting boards.
