Raw chciken and beef stored above cooked chili, pasta, cheese sauce and green beans in the Artic Air refrigerator opposite the stove. Raw beef stored in a pan with cheese

Coating on white handled knives is ripped, fraying and hanging from the handle.

Raw beef and chicken stored above cooked beef, chili and pasta and cheese in the Artic Air refrigerator opposite the stove. Raw chicken stored above lettuce, spinach, carrots, etc. in nthe Artic Air refrigerator opposite the meat slicer table. The raw meat and poultry were placed on the bottom shelf, below the precooked and ready to eat foods, in both refrigerators.
- In-Use Utensils & Between Use Storage (46.302)
Observed in-use knives and /or cleavers stored between table edges or between tables, an area not easily cleanable & sanitized. The knives were removed.

Coating on white handle knives is ripped, fraying and hanging from the handle.

Food thermometer calibrated at 42*f. The owner adjusted the thermometer.

Old food residue on knives on the magnetic strip and forks on the shelf adjacent to the Artic Air refrigerator opposite the stove. Old food residue on the fryer scoop on the microwave shelf adjacent to the fryers. Old food residue on the meat slicer frame and blade. The utensils were placed at the dishwasher for cleaning and the meat slicer was disassembled for cleaning.

a spray bottle of blue liquid on the shelf above the handwash sink by the dishwasher is not labeled. The owner identified the contents and labeled the bottle.

Raw beef and fish stored above cooked beef, onions, mushrooms and cake in the walkin cooler. The raw beef and fish was placed on the bottom shelf below the precooked and ready to eat foods. *Sliced lunch meat turkey in drippings from raw beef that is in the same pan in the walkin cooler. The turkey was disposed of by the owner, approximately 3 lbs/$10.00. Shall store raw meats separately from precooked and ready to eat foods.

a block of rodenticide is on the food storage shelf in the basement. The rodenticide block was disposed of by the owner.
