Chicken salad 52*f and cole slaw 49*d in the deli case, ambient temperature is 46*f. The salads were disposed of by the person-in-charge. Shall maintain cold food at 41*f or below. Other elevated foof temperatures noted in temperature section

Deli case is not maintaining cold food at 41*f or below. Tiles on bottom shelf in the case are blocking the air flow in the unit. Some tiles were removed by the cook. Ambient temperature of unit 46F at time of inspection.

Old food residue on some knives in the scabbard on the side of the cook line prep table. The knives were placed in the sink for cleaning. *Old food residue on the blade, frame and housing of the meat slicer on the left side table behind the deli counter. The slicer was disassembled for cleaning

Raw shell eggs stored above cooked chicken, salad and cheese in the walkin cooler. The eggs were placed below the precooked and ready to eat foods.

Plastic wrap sealed around tray of chicken cooling in the walkin cooler. The plasatic wrap was pulled back to vent the tray and allow the chicken to cool.
