There was chicken in hot holding at 98 and 116 degrees F. There were eggs rolls in hot holding at 113 degrees F. All foods in hot holding must be maintained at or above 135 degrees F. The food was discarded.

Imitation crab meat was thawing at room temperature. the surface temperature was 35'F. Thaw foods in the refrigerator, or other approve methods.

No test strips are available to test the strength of the sanitizing solution. Obtain test strips.

There is no measurable sanitizer on the dishes in the dishwashing machine. The service company was called. There is a sanitizing solution in the container holding sanitizer. Unitl there is an accetable reading of the sanitizer, the wares must be sanitized in a clean sink. Correct immediately.

The three bay sink was not set-up properly. Washing and sanitizing steps were being combined. The proper way to clean dishes is wash, rinse, sanitize, and then air dry. Field demonstration was conducted.

The chicken wings on the buffet line were only 112 degrees F. All food in hot holding must be maintained at or above 135 degrees F. The chicken was reheated to at least 165 degrees F.

Two dented #10 cans of Wayi Shan pineapple chunks, one dented #10 can of Wang Wang loquats, and one dented #10 can of Dek water chestnuts were found in dry storage. Dented cans need to be seperated out from other items and returned to the supplier or destroyed. The dented cans were placed on a hold order.
