Scoops without handles were stored in the bulk sugar and flour. Only scoops with handles may be stored in the bulk ingredients, and the handle must be maintained above the top of the product.
- Reheating Food (46.365)
The soup that had just been reheated and put in the steam table was only 121 degrees F. Soup that is reheated for hot holding must be reheated to 165 degrees F or above. The soup was placed back into the steam table.
