Wash gauge of high heat dishmachine displayed no more than 154*F through 7 cycles. Rinse was adequate(188*F on gauge,160*F internal)),pressure was adequate(30 psi on gauge), and time was adequate(68 sec). During inspection Tanya Hicks arranged for dishmachine maintenance company to correct. Please correct by 9-21-11. Same violation was noted on 9-20-10 report.

High heat dishmachine wash gauge displayed 152 through 5 cycles though data plate indicates it should be 160.But wash gauge displayed 164 by end of inspection.Please monitor and correct if gauge goes under 160 during wash cycle.

Slight accumulation of black residue on top inner surface of counter-top steamer. Cleaned.
