Employee was observed prepping chicken inside sanitizing basin of 3 basin sink. Not approved by the Dept.

(3) A self-closing, slow-closing or metering faucet shall provide a flow of water for at least 15 seconds without the need to reactivate the faucet. Observed hot water temperature in employee restroom at 98 degrees F, and front prep area handsink at 97 degrees F.
