    The deli display case at the front counter is not capable of maintaining food temperatures at or below 41F. Repair the deli case so that it functions properly and do not store any food in the case until after it has been repaired. Case was empty during this inspection.

    The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. The food employee with the food safety certification shall instruct all employees in food safety and in the PA Food Code.
  • Thawing Potentially Hazardous Food (46.383)
    A bag of fish was observed thawing at room temperature in the three bay sink, which is not an approved thawing method. Thaw food under refrigeration temperatures of 41F or less, under cold running water, in a microwave oven or while cooking the food.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    Food temperatures in the deli case ranged from 45F to 62F. Discard all potentially hazardous food stored in the deli case immediately. Cold hold all food at temperatures of 41F at all times.

    The hand wash sink in the kitchen was being used as a table and was not accessible at all times for employee use. Person in charge states that the drain is not working properly. Repair the hand sink so that it functions properly.

    The floor under the fryer requires cleaning to remove accumulated oil. Clean the floor to remove the oil.

    Food facility operator failed to post an original, valid PDA Food Employee Certification in a location conspicuous to the consumer. Post the certification on the wall with your food establishment license.
