Internal of pizza sauce on prep table = 50°F,of cheese=56°F.Had been out of cooler 1/2 hr. Moved to cooler to chill rapidly to 41 or less.Owner wi11 attempt to bring small enough amounts out of refrigerator at time that internal stays 41 or less. Other option is to record the time that is 4 hrs past the time that the food is removed from refrigerator(discard time) and write a policy that describes this process and have it approved by agent.
