    Meats and eggs inside prep area were held at 74 degrees F rather than 41 degrees F or below as required. PIC stated that she thinks unit was accidentally unplugged. Reminded PIC of duty to monitor temperature. INSTRUCTED MANAGEMENT TO DISCARD PRODUCTS AND DISCONTINUE USE OF PREP UNIT UNTIL IT IS CAPABLE OF MAINTAINING PROPER TEMPERATURE OF 41F OR LOWER.
