Internal product temperature of turkey deli meat was 46 degrees F in the top of the pan of the sandwich preparation unit rather than 41 degrees or below as required. Turkey at bottom of pan was 40 degrees F. Pans were mounded and overfilled above the top of the pans exposing them to elevated temperatures. Need to keep amount of food in pans on top to a minimum and refill unit from bottom section of cooler.

Food contact surface of metal serving spoons is not smooth, easily cleanable and resistant to pitting. Metal serving spoons that are left in meatballs and sauce are pitted and finish is coming off of spoons which are no longer smooth and easily cleanable. Spoons need to be replaced and should be constructed of a material that will not degrade when left in sauce.

Stem type thermometer indicated 18 degrees F rather than 32 when calibrated using ice point calibration. Adjusted thermometer during inspection.

Food facility lacks sanitizer test strips to monitor sanitizer concentration. Facility is using quatinary ammonia as a sanitizer and needs quatinary ammonia test strips.
