  • Manual Warewashing Hot Water Sanitization Design Requirements (46.592)
    There is an inadequate concentration of Chlorine in the final rinse of the chemical sanitizing dishwashwer. Owner said the unit is scheduled for repair and that she would dose by hand until the repairman effects the scheduled repair.
  • Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
    There is some residue on the slicer in the basement.
  • Light Bulb Protective Shielding (46.922(a))
    Lights are not shielded nor shatter proof in the walk in cooler and freezer.b

    This inspection follows that of 5/14/10. Previously noted matters are abated today except the following: Some baking is performed in the basement. This is an old bulding and is less than ideally constructed considering the cement floor, ceiling is not closed in places., etc.

  • Thawing Potentially Hazardous Food (46.383)
    There was two cases of fish thawing in a sink in the basement. Such products are to be thawed under refrigeration or under running water (if it is to be used imediately). The product was still frozen in part. It was put in the refrigerator during inspection.
  • Cooling, Heating, & Holding Capacities (46.611)
    The gravy in the hot hold unit was 128 deg. F. It must be a minimum of 135 deg. F. The owner said she will apply the four hour rule to food held in this unit until repairing it.
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    Food facility lacks sanitizer test strips to monitor sanitizer concentration. There was no sanitizer in the final rinse of the dishwasher. This was corrected during inspection.
