Potentially Hazardous Food Cheesecake was being held in an approximately four foot deli style case with a large glass front with an ambient air temperature of 52 degrees F. Cheesecake that had just been chocolate coated and is potentially hazardous was removed from case to another refrigerator. It appears as though a similar violations was noted at the Big Butler Fair on 07/02/2010 and owners were advised that Potentially Hazardous Foods need to be kept at 41 degrees F or below.

Facility still does not have a covered portable waste water container in which to transport liquid waste to an approved dump station. Facility is using an open plastic food tub that is identical to the ones being used for food preparation.
