Tomatoes in the top of the prep table across from cook line were 53*F. These were sliced this morning. Tomatoes, cheese, cooked onions and meats will be kept in upright refrigerator until this unit is fixed. Seafood salad in the salad bar - food on the top of the bowl was 61, food on the bottom was 39*F Bowls are only partially buried in the ice in the salad bar. Potentially hazardous foods on the salad bar were discarded as they had been there for over 4 hours. Approx. 240 oz approx value $40. Salad bar is set up from 11 am until after dinner. Again discussed option of using time for temperature and requirements.

Tomatoes in the top of the prep table across from cook line were 54*F. S Kraut in the bottom was 46*F. Tomatoes and lettuce will be discarded at end of night. Approximately 1/2 flat of raw eggs stored on shelf under table were 81*F. - discarded Seafood salad in the salad bar - food on the top of the bowl was 54, food on the bottom was 41*F All potentially hazardous foods will be discarded at end of serving this evening. Salad bar is set up from 11 am until after dinner. Discussed option of using time for temperature and requirements.
