- Food Storage Requirements & Prohibited Areas (46.321)
Observed one case off chicken stored on a large baking tray which is filled with standing water and juices from the chicken. The chicken inside the case was protected by being inside a plastic bag and did not come in contact with the water.
- Sanitization Requirements, Frequency and Methods (46.731)
Observed black mold like residue, on the interior of the large ice machine. Observed heavy food splash on the interior top of the consumer microwave at the TA Express Cafe.
- Cleanability of Floors, Walls, & Ceilings (46.921)
Observed dirt and food debris at the floor/wall juncture under the dishwasher and on the legs and framework of the dish machine. Observed dirt and food debris under the shelves in the walk-in cooler and walk-in freezer. Observed black mold on the caulking whiche seals tthe corners of the stainless steel wall behind the dish machine. Observed several tiles missing in the kitchen area and also in the TA Express building. The manager stated they were removed due to roof leaks and that a company was contracted to repair the roof. Observed a floor repai under the three basin sink in which bare wood was used. If wood is used it cannot be bare, it must be painter, or sealed so that it doen't absorb moisture.

No sign or poster posted at the handwash sink in the restrooms at the TA Express Cafe to remind food employees to wash their hands.
