A spray bottle of clear liquid in the rack above the three bay sink drainboard is not labeled. The owner could not identify the contents and discarded the bottle.

There is no thermometer in the salad bain marie.

Dirt/scum in the dispenser area of the ice machine at the waitress station. The owner stated that the ice machine is not used and will be removed from the facility. *Dirt covered step stool under the prep sink in the kitchen. The owner removed the stool from the kitchen.

There is no visible air gap separating the ice sink drain line and the sewer line at the waitress station. The owner stated that the air gap may be in the crawl space in the basement and will ask the plumber. The crawl space was not accessilbe at the time of inspection due to delieveries blocking the area in the basement.

The handwash sink in the kitchen was blocked by grill scrapers, sponge and brushes stored in the sink and is not accessible at all times for employee use. The scrapers, sponge and brushes were removed from the sink and the sink was cleaned.

There is a hole in the basement floor by the upright freezer because the concrete was broken to allow for water from the hurricane to drain. The owner stated that the hole will be covered.

Raw beef stored above soup and onions in the cook line refrigerator. The soup and onions were removed from the refrigerator.

Raw beef and fish stored above sliced melon, broth and sauce in the cook line refrigerator. The melon, broth and sauce were placed on the top shelf above the raw meat and fish.

Marinara sauce 58*f and chili 52*f in the Raetone refrigerator. The food was out of temperature approximately 14 hours and was not cooled from 135°F to 70°F in 2 hours and/or from 135°F to 41°F within 6 hours, after preparation. The manager disposed of approximately 20 lbs/$70.00.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Beef broth, sauce and the ambient temperature in the cook line refrigerator are 46*f, the unit is stocked daily. The food was placed in another refrigerator. Refrigerator temperature was retaken and was 38*f. The manager does not know if the refrigerator was on defrost. Shall maintain cold food at 41*f or below.
