    Observed deli sandwiches, uncooked bacon, deli meats and cheese and hot dogs held at 55 degrees F in the open front refrigerated unit. Food was disposed of in the dumpster.

    Observed cartons of milk being stored under the condensate pan of the cooling condenser of the walkin cooler whcih is dripping on the containers of milk.
  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    Observed chicken and sausage sandwiches being held at 120degrees F not 135 degrees F as required.
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    Observed no test strips in the facility to monitor sanitizer concentrations. Firm needs to obtain test strips to monitor a chlorine based sanitizing solution at 50-100PPM or a quatenary ammonia sanitizing solution at the manufactures recommendations.
  • Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
    Observed the handwash sink in the food prep area not designated as a hand wash sink and is being used for duties other than handwashing.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    Observed the backsplash on the countertop behind the handwash sink is deteriorating and needs replaced.

  • Frequency of Cleaning Equipment Food Contact Surfaces and Utensils (46.712)
    Ice machine in rear of facility is In Compliance and was cleaned by a refrig. company. Machine in front of the facility remains a violation due to residue and sediment in water retention of machine. Owner to call tech and have return and clean area in question.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    Shelving in walk in soiled and needs cleaned.

  • Duties of the Person in Charge (46.102)
    The Person in Charge did not demonstrate adequate knowledge of the PA Food Code. PIC could not locate license, and said "NO CLUE" when asked about FEC person. Firm is also doing warewashing at hand wash sink in front of store. On 7-30-2010, Owner Medhat Khala could not demonstate how to calibrate thermometers, make sanitizer in 3 basin sink and follow proper ware wash procedures.

    Food faciliy does not have a Health Awareness Reporting Procedure for food employees. Form provided by SAN
  • Food Sources (46.211)
    Ice bagged for Retail sale not to be sold until further notice. Ice originated from ICe machines and machine were to be shut off and ice destroyed on inspection dated 7-28-2010
  • Single-Use Gloves for Only One Task (46.305(a))
    Owner /PIC retrieved gloves for use without proper hand washing procedures prior to obtaining gloves. SAN provided correct procedure and demonstration.
  • Accuracy of Temperature Measuring Devices for Ambient Air and Water (46.562)
    Probe thermometer not calibrated and was reading 52 F. PIC could not demonstate procedure for recalibrating. PIC stated this thermometer would no longer be used.
  • Frequency of Cleaning Equipment Food Contact Surfaces and Utensils (46.712)
    Black residue, pink slime observed on the interior of the ice machine bin around deflector shield and ice bin. Machine located in rear room behind door. Machine was shut down by PIC and per PIC- Tech to be called for cleaning. Ice to be dumped and machine and bin to be sanitized prior to re-starting. Ic emachines as of 7-30-2010 are still out of compliance due to sanitary conditions with waht appears to be mold growth, scale and brown residue.
  • Light Bulb Protective Shielding (46.922(a))
    One light buld missing and exposed electrical circuit due to mising light

    Moist wiping cloths observed lying on the counter and not stored in sanitizing solution.
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    Food facility lacks chlorine sanitizer test strips to monitor sanitizer concentration.
  • Surface Characteristics of Indoor Areas of Food Facilities (46.901)
    Several floor tiles are missing in Walk in Cooler.
  • Light Bulb Protective Shielding (46.922(a))
    Several lights not shielded and end caps missing in side reach in coolers with lip contact surfaces on cans are for retail sale.
