Food is not stored at least 6 inches above the floor. Two boxes of bananas were observed stored directly on the floor.
- Hot Holding Potentially Hazardous Foods (46.385(a)(1))
Hamburgers were held at 118 degrees F rather than 135 degrees F or above as required. It was discovered that the hot holding equipment was not on. The hamburgers were placed in the oven and reheated to 165 degrees F for 15 seconds. The unit was re-set and holding temperature during this inspection.

Temperature measuring devices for ensuring proper temperatures of equipment are not available or readily accessible in the milk cooler in the back food production area.
