30 eggs at room temperature had surface = 57°F.Had been at room temperature 2.5 hrs.No procedure or discard was posted.Procedure written, discard posted.

Eggs and steak cooked to order but not disclosure (*by eggs and steak) and no reminder(* with statement) on menu. One menu marked correctly during insp. Menus to re-done by 3/1/11. These changes will be on new menu.

No data plate indicating temperature, time, chlorine specifications of dishmachine. 120-120, 90 sec, 100 ppm chlorine observed during operation. Please attempt to obtain from manufacturer by 2/4/11 and display.
