After being washed all equipment must be stored so that it is allowed to dry and does not sit in water. 2. Clean refirgeration units in bar areas so that they are free of food debris and spilled drink mix. 3. Ice wand must be stored in freezer unit so that it remains clean and does not become contaminated with food items. Ice wand may be covered with plastic until ready for use. 4. Store spatulas in downstairs sandwich area so that they are not contaminated by water splashing from handwash area.
