- Observed several seasoning bottles without lids or any sort of coverings during the time of inspection. Several jars of seasoning were voluntarily discarded. Protect food from contamination by storing food in packages, covered containers, or wrappings.
- Observed a tea spoon and chunks of food debris in the kitchen hand sink. Ensure the kitchen sink is used for hand washing only.

- 229.163 (i) not in HWS. Food employees not cleaning their hands in a hand washing lavatory and instead clean their hands in a sink used for ware washing. Male staff washed his hands in the 3 compartment sink then went and started food prep.

- Discontinue storing raw shell eggs above food items. The eggs were stored in the walk in cooler above the prepped food items. All food items shall be protected during storage. Provide for the food items to be covered at all times.
- 229.164 (o) (7) (A) consume by date (prepared). - Provide for the pest control service to exterminate for insects.The pest control sales slip shall be available for the inspector to view. Flies, fruit flies and drain flies seen in the establishment.
- Provide for the pest control service to exterminate for rodents. Observed a live rodent in the new food storage room and observed rodent dropping at the bottom of the chip bin. Seal all gaps, cracks and holes in the establishment.
- All dishes shall be washed properly. Wash in hot soapy water, rinse in clear rinse water then sanitize in bleach and water 50 ppm-100ppm. Observed the employee wash in soapy water then place the dishes in the 3rd compartment that did not have bleach then air dry. COS
- Provide for all food contact surfaces of equipment to be clean, smooth, easily cleanable, non absorbent and food grade. Discontinue storing food items directly in HEB like bags. Provide a scoop with a handle for all bulk bins. Observed a damaged scoop in the ice in the waitstation. Observed a bowl in the sugar.
- Discontinue allowing employees to drink from open containers in the kitchen, food storage areas. All drinking cups shall be a cup, lid and straw and shall be stored in such a way that food items are not contaminated. Open cups of drink seen in the new food storage room. Proper drinking cup seen ontop of a prep table where food items are being prepared.
- Discontinue storing personal items above the food and food product that is offered to the public. Observed purses on the dishes and soda boxes. In the walk in, observed personal drinks on the top shelf above the food items that are offered to the public.

- Bare hand documentation not maintained. Provide for the documentation to be available at all times if the establishment is going to use bare hands to handle ready to eat food items. One employee was wearing gloves when handling ready to eat foods, but the other two empoyees that were handling tacos, bacon, tortillas did not have on gloves so the documentation needs to be available.
- Provide for all sinks to have paper towels to be available. The kitchen sink does not have paper towels.
- Discontinue use of the household pest control supplies. Commerical grade products must be used in this establishment. Raid flying insect spray found in the kitchen. Provide for the sanitized water at the 3 compartmentsink to be 50-100ppm. The sink had 200 ppm bleach water.
- Provide for the kitchen hand sink plumbing to be working properly. The hand sink is leaking from the plumbing.
- Provide for all food contact surfaces of equipment to be clean, good repair and food grade. Discontinue using HEB like backs to store cooked tortillas. These tortillas shall be placed in a food grade container or bag. Provide scoops with handles for all bulk bins. The beans container in the walkin had a bowl as a scoop. Provide for the inside of the microwave to be clean. Microwave has food debris on the wall.
