- Food manufacture is need for ice bagging. Ch 13, Art IV, section 13-112(a)(1) and (2) CFM. A food establishment shall employ at least one person assigned to each shift of twelve (12) or fewer hours who: (1) Meets the "person in charge" definition found in the Texas Food Establishment Rules; and (2) Has a valid and current food manager's certificate issued by the director. Manager must show proof of Food Manager Certification. Once a valid Food Manager's certification is obtained, proceed to 1901 S. Alamo (DBSC) Health Department desk to purchase ($15.45) a Metro Health ID.

- Deli sandwiches in RIC are not labeled with 1st date of refrigeration. According to DELI FRESH all product is to be kept frozen until placed in refrigerator. A date must be placed on product by retailer of 1st date in refrigerator.
- Handsink near 3 compartment sink is not accessible due to prepacked product blocking sink. Clear entire area for sink to be used by employees. Restroom had sign posted *Out of Order* Correct issues in restroom. Sanitize walls and entire surfaces of restroom.
- Store all toxic items, containers, plastic bottle ect in a designated area away from food storage and above refrigerator.
- Mop sink is not clear. Unable to reach mop sink. All waste water must be disposed in mop sink not in 3 compartment sink.
- Properly santize all soda nozzles,and container for pickles on a daily basis, items are dirty to sight and touch. Store tongs for pickles in clean and dry place. Store ice scooper in a clean and dry place. Sanitize 3 compartment sink throughly. Properly clean and sanitize coffe pot.
