Observed the quaternary ammonia sanitizing solution being used in sanitizing utensils after washing and rinsing at more than 400ppm, and the chlorine sanitizing solution in bucket being used in sanitizing counter tops at less than 100ppm. Ensure that all food contact surfaces are cleaned and properly sanitized. Store wiping cloths in sanitizing solution in buckets prior to and after each use. Ensure that sanitizing solution has sanitizer at 100ppm for chlorine and 200ppm for quaternary ammonia. Corrected during inspection.
