    An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler. A thermometer +/- 2 F shall be provided for each hot and cold holding unit of potentially hazardous foods and high temperature warewashing machines. (114157, 114159)
    The available probe thermometer was observed in need of a working battery.

    Ensure probe thermometers are used and maintained by the employees.

    The walls / ceilings shall have durable, smooth, nonabsorbent, and washable surfaces. All floor surfaces, other than the customer service areas, shall be approved, smooth, durable and made of nonabsorbent material that is easily cleanable. Approved base coving shall be provided in all areas, except customer service areas and where food is stored in original unopened containers. Food facilities shall be fully enclosed. (114268.1) Mats and duckboards, if used, must be removable and easily cleanable.     A large yellow stain was observed occurring on the wall within the dry storage area.

    The kitchen floor tile was observed broken and several missing and replaced with bare rough concrete.

    Water damage was observed on the wall area below the warewashing area.

    observed several areas of the kitchen walls extremely rough in texture and with exposed spackle.

    Observed a bin of salsa held cold at the front service area with a temperature of 50F degrees.

    Observed a bin of pre-portioned butter held at 45F degrees at the front counter.

    Observed a bin of country gravy left to cool 1 hour prior to the observation with a temperature of 60F degrees. The bin was later observed also being used as a colding holding bin. Operator was instructed to reduce the quantity being held and leave the rest for cooling in the walk in cooler.

    Maintain potentially hazardous food items below 41F or above 135F degrees.
