- 021 Thawing - Improper Method . Food shall be thawed by the following methods: in refrigeration unit; under cold, potable water of sufficient velocity to flush loose particles; a microwave oven; or, as part of cooking process. (114085)
- 044 Hair Restraints/Outer Garments/Nails/Rings - All employees preparing, serving or handling food or utensils shall wear clean, washable outer garments or uniforms and shall wear a hairnet, cap, or other suitable covering to confine hair. - 056 Thermometer - Refrigeration/Probe An accurate easily readable metal probe thermometer suitable for measuring temperature of food shall be available to the food handler.
