  • Equipment - Good Repair and Proper Adjustment
    Observation: Steam well box not holding proper temeperature. Observed wet towels in bottom of unit.
    Correction: Repair the steam well box to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the steam well box, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Fire extinguisher at bar need to be updated. Refrigeration and product are holding at proper temperatures. Application filled out on site after inspection was conducted. Facility recommended for permit. Food permit, copy of application and receipt issued to manager.

    Observation: Hood filters in need of cleaning due to dust and grease buildup.
    Correction: Alter or replace this equipment so that the filters can be easily removed for cleaning and replacement. Clean and sanitize hood filters.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Observed water in bottom of Beverage air unit.
    Correction: Repair the Beverage air unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the Beverage air unit, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Dishwasher sanitizer registered at 50ppm. Three compartment sink sanitizer registered at 200ppm. Bar True 3 door fridge 41 degrees, True 2 door fridge 38 degrees and reach-in unit 34 degrees. Post food manager certificate. Viewed oyster tags and observed oyster tag attached to box being used by chef. Check fire extinguisher, tag expired on extinguisher. Copy of 2014 food manager and online food handler class information given to manager.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The door gaskets of the True freezer (left side) and bar True 3 door fridge are torn/damaged.
    Correction: Repair or replace the door gaskets in accordance with the manufacturer's specifications.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed excess water/wet towels inside Beverage air unit next to panel boxes and ice buildup inside True freezer unit. Microwave inside in need of cleaning.
    Correction: Clean and sanitize these surfaces for food contact. Recheck unit for proper operation.

True 2 door desert unit registered at 32 degrees, True refrigerator (top) 39 degrees, True freezer (bottom) 0 degrees, Container of sanitizer 200ppm, Turbo air 2 door unit 36 degrees, Dishwasher- wash 125 degrees, rinse 137 degrees, sanitizer 50ppm.
Refrigeration is holding at proper temperatures. Product is holding at proper temperatures. Spoke with manager concerning aluminum foil and liner for metal table. 2014 Food handler class schedule given to manager. Informed manager that all Serv Safe certificates need to be transferred over to Norfolk certificates. There
is a $10 transfer fee. Facility recommended for permit. Food permit and copy of receipt issued to manager.

  • Equipment - Good Repair and Proper Adjustment
    Observation: True freezer left door gasket in need of repair.
    Correction: Repair or replace the True freezer door gasket in accordance with the manufacturer's specifications.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Outer portion of waffle maker in need of cleaning.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

Dishwasher sanitizer registered at 50ppm. Spoke with manager concerning FOG Program (grease trap). Informed manager to post cfm certificate. Viewed paperwork from Dept. of Utilities in reference to grease trap. Informed manager to recheck bottom unit of Beverage air unit for proper drainage. Spoke with manager concerning Health policy for staff, food handler cards and daily temperature logs. Hood system is clean with current sticker posted on hood. Consumer advisory is on current menu. Refrigeration and product are holding at proper temperatures. Dining area and restrooms are clean. Copy of food handler and food manger class schedules given to cfm.
No violation noted during this evaluation.

    Correction: Repair or replace the door gaskets on freezers in accordance with the manufacturer's specifications.
