Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees. Provided by VDH.
Comments:
Breakfast and lunch for summer program provided by Sanville Elementary School. Operator needs to use QUATERNARY AMMONIUM test strips to monitor the concentration of this type of sanitizer. Facility has chlorine test strips available.

  • 1720 - A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
    Use a CHLORINE chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
Comments:
During this inspection warewashing procedures were discussed with the person in charge and the importance of following this procedures to prevent equipment contamination. A warewashing fact sheet was provided.

    To minimize hand contact with fecal waste, toilet tissue is necessary for hygienic cleaning following use of toilet facilities. Toilet tissue must be supplied to meet the demand

Items marked on routine inspection were addressed.
A new floor was installed in boy's rest room.
Cleaning of both restrooms was done.,
A new ceiling was constructed in kitchen.
Thermometers were installed in coolers.

    Cold hold potentially hazardous food at 41F (45F) or below to inhibit the growth of harmful bacteria.
  • 0960 2 - The food contact surface of the Nuby sippy cups are not durable, nonabsorbent, easily cleanable, resistant to pitting. They have soft rubber tops that are hard to clean and should be boiled like a baby bottle nipple.
    Replace the Nuby cups with a more cleanable item.
  • 1320 - There was no temperature measuring device located in the refrigerators and freezers.
    Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. I recommend that staff log temperatures of each unit on a daily basis.
  • 1550 - The kitchen cabinet, water heater, and refrigerator are not spaced in a manner that allows accessibility for cleaning, nor is it installed with closely abutting surfaces to minimize the need for cleaning. Spaces between equipment of 1"-2" are present, and are showing the need for cleaning.

  • 3170 - Kitchen ceiling is stained, warping, and showing signs of leaking roof. Bathroom floor in men's bathroom has loose and warped tiles.
    Repair any roof leaks and repair kitchen ceiling. Replace tiles and make men's room floor non-absorbant and easily cleanable.
  • 3180 - Floors are showing built up dirt and food debris between and under equipment. Bathroom floors have urine odors and stains, especially along wall junctures.
    All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • 3220 - Mop observed standing in dirty water when not in use.
    Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
Comments:
This kitchen has been "dormant" for the summer as the facility has participated in the USDA meals program. Boxed pizza was served on this date, and the kitchen will resume normal operations tomorrow. The kitchen has been used for snacks and storage of milk and juices.
IMMEDIATE attention must be given to refrigeration temperatures.
