    Observation: Chicken, steak and grilled onions were hot holding at improper temperatures. The temperature range of the food was 126-130 F. PIC voluntarily discarded the food.
    Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria.

    Observation: Raw chicken and beef products were cold holding at improper temperatures. The temperature range was 43-44 F. The PIC voluntraily took corrective action.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Service call has been placed during this inspection and other corrective actions taken.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

Discussed with the CFM: On the initial inspection conducted on 11/13/2014 there were cold holding issues noted and corrected on that day in regards to the food on the large make unit. Today during the follow-up, improper cold holding was also noted on the same unit.

Recommend charting the cooling of bulk containers of reay-to-eat food product. Chlorine dishmachines at the bar and dishwash area both checked for proper concentration using the provided test strips (50ppm-100ppm). Some process noted in the maintenance of the racks and storage bins in the dishwash area, recommend replacing the rusty shelves. Recommend not using the food grade bulk buckets to store trash in the kitchen to avoid future possible cross contamination issues. Overall good temperature control observed. Cooling charts reviewed for 01/01/13, 01/02/13, and 01/03/13. Data logger monitoring system observed available in the ROP section of the walk-in refrigerator. Manager was able to download the temperature monitoring chart(s) for the walk-in refrigerator.
