Make sure to rotate cutting boards and cooking utensils every four hours
Make sure to get some quat sanitizer test strips from the company that you get the quat sanitizer from.
Make sure to replace bulbs under exhaust hood.

    Observation: Observed person in charge does not ensure that food employee(s) who exhibits or reports a symptom or diagnosed illness or history of exposure is restricted or excluded PIC could not recite the employee health policy.
    Correction: The person in charge is responsible for ensuring that staff who exhibit or report symptoms or diagnosed illness or history of exposure are restricted or excluded as required. In service training duing inspection.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

    Observation: The prepared ready-to-eat (RTE) chipolte in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Product was discarded during inspection.
  • Temperature Measuring Devices - Ambient Air and Water
    Observation: The ambient (air/water) temperature measuring device (dual or degrees Fl) located in the bar beer box for the juice and both RIC at the wait stations
    Correction: Provide a temperature measuring device that is easily readable and accurate to +/-3 degrees Fahrenheit in the intended range of use.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the beer box has accumulations of standing liquid
    Correction: Clean inside the beer box and remove standing liquid, and remove all glassware to be clean and sanitized today.
  • Handwashing - Using a Handwashing Lavatory
    Observation: The handwashing facility located at the both wait stations are blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the @EQUIPMENT@ preventing its use.

All glass ware, utensils and dishes etc.from the bar must be taken to the dish machine or 3 compartment sink in kitchen for wash-rinse and sanitize. Do not use dish machine in bar until repaired. Hand sink unblocked in kitchen adjacent to office. All food equipment and food contact surfaces must be washed- rinsed and sanitized prior to usage. Remove all construction equipment and personnel prior to opening and prepping foods. Permit to operate issued.
  • Equipment Openings, Closures and Deflectors
    Observation: Seal back splash at dish machine in kitchen to wall.
    Correction: Caulk the gap from back splash to wall. Correct prior to opening.

#1 No smoking signage needed on both doors. #2 Handsinks and 3 compartment sink need plumbing completed and working. #2 Caulk and seal sinks to the back walls. #3 Lighting in bar area must be 20 foot candles in the bar. #4 Discard all PHFs found out of temp during walk thru. #5 Relocate all foods in temp to other refrigeration units. Observed PHFs discarded during inspection. Foods re-located during inspection. #6 dish machines are not heating to the required operating range. Correction to occur prior to opening. Employee health policy is in place.
No violation noted during this evaluation.

Corrections prior to opening inspection. #1 Floors to be completed. #2 Food prep sink and 3 compartment sink must have open air gap discharge. #3 Lighting in walk in cooler to be repaired. 50 foot candles of lighting are required in areas were food is chopped mixed or blended using knives or electrical equipment, 20 foot candles is required in all other areas of kitchen, bar and bathroom, 10 foot candles is required in the walk in cooler. #4 Floors and base molding in wait station and bar area to be completed as well interior of bar. #5 Building department code compliance, in writing. #6 Wash-rinse and sanitize all food contact equipment, and small wares. #7 Thermometers and test kit available. #8 All refrigeration and dish machines must be operating within required ranges.
