    Correct by cooling food in shallow pans (1-2 inches) in an ice/water bath with frequent stirring food must be cooled from 135-70 degrees in 2 hours and 70-41 degrees in 4 hours. Food was discarded.
  • 1570 - Observed the following equipment in poor repair: torn door gasket on the 3 door reach-in cooler.
    Correct by repairing.
  • 1580 - Observed the cutting board at the prep unit heavily scratched/stained.
    Correct by resurfacing or replacing.
