All violations were discussed with the PIC. Correction made from previous inspection on 02-11-09: 0570 New microwave oven in the Quail Run kitchen. Good! Kitchen and food storage areas- very clean and well-organized! Food temperatures were EXCELLENT!

Violation: 0570 - Wiping cloths improperly stored between use. Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

All violations were discussed with the PIC. Corrections from previous inspection on 10-23-08: 1150, 3270, 3850 New microwave oven and new storage bins (labelled)GOOD! Dumpster lids CLOSED! All foods covered and elevated. EXCELLENT! Storage room clean and organized, EXCELLENT! Date marking, good!

1150 - Corrected During Inspection Aluminum foil is being used as a liner for the storage trays(cabinet in corner of the kitchen). Please remove all aluminum foil from trays, drawers and shelves.
3270 - Evidence of flies in kitchen. Methods are not being used to control pests When pests are found use methods to such as trapping devices or other means of pest control. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
3350 - Corrected During Inspection Unnecessary poisonous or toxic materials, i.e. can of insecticide, was found on a cabinet in the food establishment. Remove unnecessary poisonous or toxic materials.
Comments:
All violations were discussed with PIC. The temperature of 48 degrees in the Traulsen SS 2 DR refrigerator was the result of a shipment of food being refrigerated prior to my visit. Storage areas were CLEAN and WELL ORGANIZED! Floors were clean! Excellent! Dumpster lids were CLOSED! Excellent! Food temperatures and storage are excellent! The items corrected from the previous inspection of 03-03-08 are as followed: Back door screen repaired. Mechanical dishwasher repaired (new parts).

1570 - Corrected During Inspection Mechanically vented hood filters have gaps in between filters. Repair or replace hood filters and/or eliminate gaps between filters.
1700 - Critical Chlorine sanitizing solution used was not at an acceptable concentration (0ppm) in the mechanical chemical warewashing machine located at the Quail Run Assisted Living facility. Adjust the chlorine sanitizing solution to a level of at least 25 parts per million when the pH is at 10 or less and the water temperature is at 120F.
2930 - Corrected During Inspection Outer opening of the food establishment is not protected against entry of insects and rodents. Back door of food facility has a torn screen. Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

All violations discussed with person in charge. Instructed to manually sanitize all food utensils until mechanical warewash machine is sanitizing at a proper concentration.

Comments:
Called to establishment after grease fire in kitchen. No damage was done to the equipment or building. Fire suppression system discharged over stove. Food on stove discarded. The suppression system was in the process of being re-charged during inspection. Operator agreed to wash, rinse, and sanitize food contact surfaces before resuming cooking using the immediate area.

0820 - Critical Potentially hazardous foods cold holding at improper temperatures in the Jordan Reach In. Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F (45F) or below. All cooler units must be capable of maintaining at least 41 degrees F or below before the issuance of the 2007 permit.
1150 - The nonfood contact surface of the dry storage shelves are not designed or constructed to be easily cleanable. Seal or paint bare wood sufaces so they are smooth, durable and cleanable.

1570 - Ice Cream chest freezer door and plastic sugar container lid was observed in a state of disrepair and damaged. Repair the chest freezer door and replace the plastic container lid to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the chest freezer door, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
