2190 - Corrected During Inspection Water from the handwashing sink was measured at a temperature less than 110F. Make necessary adjustments to valves and lines serving the handsink to provide water of at least 110F to allow more effective removal of fatty soils encountered in kitchens.
Comments:
All cold foods are held at 45f or below. All hot foods are held at 140f or above. Time and temperature control is used for : cheese, tomatoes (4 hours), and lettuces and onions: (6 hours). Foods are lebeled with time expiration. No cross-contamination observed. Chlorine sanitizer was observed at proper concentration.
