| Note: Please correct the following in order for permit to be issued: * Facility is in transition of switching from previous restaurant to continental breakfast. * Facility is using only all pre-cooked meats and eggs for breakfast items. * Observed many foods in the walk-in refrigerator and walkon freezer not pertinent to the continental breakfast operation. This food is going out of date and needs to be discarded and removed from premises. DISCARD/ REMOVE FOOD AS DISCUSSED. * Dish-machine was not sanitizing in the final rinse. Observed no sanitizing solution hooked up to the machine. If machine will not be used then remove chemicals and disconnect machine. * The three compartment sink may be used to wash, rinse, and sanitized dishes- so the mechanical dish-machine does not have to be used and may be disconnected rendering it not usable. * Any unused equipment should be disconnected and cleaned so as not to draw insects= roaches or rodents. * Clean the walk-in out (removing food) and then conduct a thorough cleaning/ sanitizing of shelving/ walls/ and floors, etc....
