Kitchen is clean and organized. Gaskets have been replaced on two-door reachin refrigerator. Observed and discussed the "sealed meal" program. Cooling temperatures will be monitored by staff. Employee health policy handout discussed. Employees observed washing hands.

1570 - The door gasket to the two door refrigerator is in poor repair. Repair or replace the door gasket on the two door unit in accordance with the manufacturer's specifications.
1570 - Door to walkin freezer was observed in a state of disrepair and damaged. Repair the walk in door to allow for a proper seal to the door frame, thus removing the safety threat from ice build up and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the door, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
Comments:
Kitchen is clean and food temperatures are good. Dishmachine was not in use at time of visit and it could not be temped. Stock room is in great need of organization to properly clean and store food, equipment, and utensils. Those items which are not used on a regular basis should be removed from the premises or stored in another location.

Kitchen serves area seniors Monday, Wednesday, and Thursday. Kitchen also cans foods and quick freezes Meals on Wheels under the regulations of VDACS. Monitor the gaskets on newer two door refrigerator. Business will also remove unnecessary articles from the dry storage area. Operator will contact health department with results of dishmachine temperature test.

Establishment is not currently preparing food. Kitchen is currently being shared with various groups participating in the Maple Festival. Discussed the need to designate and label all areas of storage for catering operation. Suggested to use laminated notecards to laminate areas of refrigeration, freezers, and dry storage areas. Dishmachine is not currently being used and could not be tested.

Kitchen not in operation at time of visit. Kitchen appears clean and organized. Still need to address chipping paint on steam pipe. Consider wrapping pipe with insulation painting to make smooth and cleanable (similar to adjacent pipe in kitchen). Also consider utilizing a fly spray approved for used in a commercial kitchen, which can be sprayed on baseboards to minimize fly population when necessary.

Comments:
No violations during this evaluation. Condensation problem in refrigerator has been repaired. Kitchen is continuing to work on problem with chipping/flaking paint on steam pipes throughout kitchen. Some pipes have been scraped, and will be tested with Rustoleum prior to removal of all paint. There does not appear to be a problem with contamination at this point. Kitchen is slated for remodelling as soon as grant money is available. A drop ceiling is planned to be placed in kitchen.
