These good conditions and practices are observed: the hand sink is stocked and accessible; sanitizer solution concentration is acceptable; food handler uses barriers to handle ready-to-eat foods; food contact surfaces are clean; and cooking and hot holding temperatures are acceptable. Some potentially hazardous foods are cooked from frozen. Tomotoes and the knife for slicing them are stored in the refrigerator.

The magnetic insect screen on the doorway is a nice addition. The manager and I discussed: condition of the cutting board.

Violation: 2930 - Corrected During Inspection The outer opening at the back of the unit is not protected against entry of insects and rodents. Keep the back door closed or install a screen to exclude flies and other pests.

The facility, equipment, and utensils are clean. Employees are wearing hair restraints and using barriers when handling ready-to-eat foods. Cooking, hot holding and cold holding temperatures are acceptable. The manager and I discussed: conditions required for food contact surfaces, and proper concentration of sanitizer solution.

Comments:
The mobile unit is very clean. Foods are observed at proper temperatures for hot holding (>140°F) or cold holding (<41°F). Barriers (tongs, spoons, disposable gloves, etc.) are used to handle ready-to-eat foods. Employees wear hair restraints. The unit operates with the good practice of designating one employee to handle only cash, while another handles only food. In-use utensils are changes every 2 hours (regulations require cleaning or changing at least once every 4 hours). Several food thermometers (properly scaled in increments of 2°F or less) are available. Utensils are store with handles up/out to prevent touching the food contact surfaces of the utensils. The manager and I discussed proper use of sanitizer solution.
