    Observation: The following foods were observed cold holding at improper temperatures:
    1. Ham (46 F), provolone cheese (54 F) and American cheese (52 F) on ice
    2. Tuna salad (46 F), deli meats (47 F), cheese (46 F), milk (45 F) in walk-in cooler
    3. Milk (45 F) and cream (45 F)
    Foods were discarded.

    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long. Up to a point, the rate of growth increases with an increase in temperature within this zone.     Observation: Various foods were observed cold holding at improper temperatures in the 1 door Superior prep unit. Observed milk and cut melons cold holding at the improper temperatures of 46-48 F in thew display unit. Observed foods piled too high in the top portion of the two door prep unit (right) cold holding at 54 F (ham, cheese pork sausage). Foods were voluntarily discarded. Juices were moved from unit to walk-in cooler.
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less.
