Comments:Food an water: Courthouse Road location.
Discussed:
1) Spoons stored with food-contact surfaces facing in various directions. Please store handles upward.
2) Handwashing setup. Please store off ground with a catch basin. - CORRECTED.
Inspection conducted at YMCA Family Fun Day.

Comments:Ice cream made at Bruster's facility.
For handwashing, they use cooler with water, catch basin, sop, and paper towels. Fill cooler in sink at store.
Only dishes used at events, kept in clean container.
Extra scoops brought on site and sanitized at store.
Employee health policy for store is followed.
Generator brought to longer events, but unit is self-contained.
Inspection of new unit conducted. Re-inspection planned for about 2:30 PM to see that unit temp is lowered.

Comments:Utensils (scoops) are provided for each flavor and kept in each flavor in the freezer. Gloves provided.
No deficiencies observed during inspection.

Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

Comments:Milk relocated to colder refrigerator. Yellow refrigerator temperature turned down.
Mobile unit not on-site. Mobile unit must be on-sit in order to fall under the mobile unit permit. PIC agreed to bring mobile unit and serve out of it.

Cones made at store and brought to location.
Inspection conducted at Fredericksburg Agricultural Fair.

- 1730 - The thermometer on the drop in freezer is not in good repair and/ or not accurate in the range of use.
Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use. - 1750 - Manufacturer containers were observed reused for the storage of single service equipment.
Discontinue the reuse of manufacturer containers for storage. Provide approved reusable food storage containers designed for your food storage needs.

Discussed with PIC:
- only foods on menu approved for service at Fair.
Lemonade - made in store & brought on site
Sundaes - brownies cut at store & brought on site
Smoothies - made using mix, not fresh fruit
- Utensils will be taken back to store to be washed and sanitized.
- If any of these items will be on mobile unit menu, submit a letter to the Health Dept. with menu additions.
- Waffle cones shall not be prepared on-site. Cones may be brought from store.

This facility is in substantial compliance with the Virginia Board of Health Food Regulations. Permit to operate is granted.

Comments:Site visit made to commissary to view mobile unit (pushcart). Facility inspected under VDACS. Facility appeared clean and well maintained. Pushcart will need to carry equipment for handwashing. Handwashing equipment, trash can, etc. not on site to inspect. Opening inspection will be conducted at Temp. Event on March 18, 2006.
